White Buttercream Icing

Ingredients

  • ¾ cup Crisco
  • ¾ tsp. salt
  • 2 tbsp. milk
  • 1 tbsp. kayro corn syrup
  • ¼ c. water
  • 2 tsp. Wilton Butter Flavor
  • 1 lb. sifted confectioners' sugar
  • For white chocolate icing: Add 6 oz. melted white chocolate which has cooled to room temperature.

Instructions

  1. Mix first 6 ingredients together until smooth on low speed, gradually adding 1 lb. sifted confectioners’ sugar.
  2. Add kayro as needed to thin for icing. Add more sugar to stiffen for decorating

Black Skillet Egg Pie

Ingredients

  • 6 eggs
  • 1 cup milk
  • 2 slices french bread or 2 yeast rolls crumbled
  • 1 tbs dry mustard
  • 1 cup sharp shredded cheese (or any kind you have in fridge)
  • 1/2 cup bell pepper
  • 1/2 cup onion
  • salt and pepper

Instructions

  1. Set oven to 425 and put black iron skillet with 2 tbs of oil or bacon drippings in oven to preheat.
  2. Mix eggs, milk, dry mustard together-- whip till fluffy. Add other ingredients and mix well. Pour into hot skillet--it should sizzle.
  3. Bake for 30 min.
  4. Serve with your favorite salsa.

Best Baked Bacon

Best Baked Bacon

Ingredients

  • 10-12 strips thick sliced bacon
  • cookie sheet with sides

Instructions

  1. Do not preheat oven
  2. Arrange bacon strips in a single layer on pan. If needed you may add 3-4 extra strips across the first layer and adjust strips later when the bacon shrinks.
  3. Place bacon in a cold oven and set temp to 335 degrees (conventional oven).
  4. 20-22 minutes should do it for a single layer with no need to flip bacon. Add time as needed in 1 min intervals. At this stage watch closely. When bacon is medium brown take out of oven and tilt pan to allow grease to drain away but leave the bacon on the pan for 3-4 mins longer. Place strips on paper towels and pat dry.
  5. Any left over bacon will keep in the fridge for another day. Just 30 sec in microwave.

Stuffed French Toast

Ingredients

  • 2 Loafs French Bread sliced on a slant
  • 8 oz. softened cream cheese
  • 8 eggs
  • ½ cup milk
  • ½ tsp vanilla
  • 1 TBSP sugar
  • Butter or margarine
  • ½ chopped pecans
  • Confectioners’ sugar

Instructions

  1. Set out sliced bread, matching parts.
  2. Spread cream cheese heavily on one slice and lightly on the 2nd slice.
  3. Add pecans on heavily spread side and top with 2nd slice making a sandwich.
  4. Dip sandwiches into egg mixture.
  5. Fry in melted butter or margarine until brown on both sides.
  6. Sprinkle with conf. sugar.
  7. Serve with syrup or preserves.

Ingredients

    Cake
  • 1 pkg. white cake mix
  • 1 3oz. strawberry jello
  • 1 cup mashed stawberries with juice (1 ½ c. whole)
  • 1 c. oil
  • ½ c. whole milk
  • 4 large eggs
  • 1 c. coconut
  • ½ c. chopped pecans
  • Icing
  • 8 oz. cream cheese (room temp.)
  • 1 stick butter (room temp.)
  • 3 ½ c. confectioners’ sugar (sifted)
  • ¾ c. mashed strawberries, drain well
  • ½ c. coconut
  • ½ c. chopped pecans

Instructions

    Cake
  1. Preheat oven to 350.
  2. Pour batter into 3 9-inch round greased/floured cake pans.
  3. Bake 25 – 30 minutes, cool for 10 minutes.
  4. Remove from pan and allow to cool completely before frosting.
  5. Icing
  6. Combine cream cheese and butter with electric mixer.
  7. Add sugar and strawberries.
  8. Fold in coconut and pecans.
  9. Refrigerate for 30 minutes before spreading on cake layers.
  10. *Also makes enough for a sheet cake and 6 cupcakes. Bake the cupcakes for 20 minutes and the sheet cake for about 35.

Ingredients

  • 1 bone-in turkey breast (4 ½ to 5 lbs.)
  • ½ c. butter melted
  • 1/4 c. apple juice
  • 2 TBSP chopped fresh thyme of 1 ½ tsp. dried
  • 1 tsp salt
  • 1 tsp paprika

Instructions

  1. Heat oven to 325.
  2. Place turkey skin side up on rack in large shallow roasting pan
  3. Insert meat thermometer in thickest part of breast. Roast uncovered for 1 hour.
  4. Mix butter, apple juice, thyme salt paprika and garlic.
  5. Brush turkey with half of butter mixture.
  6. Roast 30 minutes.
  7. Brush with remaining mixture.
  8. Roast 1 hour or until thermometer reads 165.
  9. Let stand 15 minutes.

  • 1 c. coarsely chopped red apple (medium)
  • 1 TBSP butter
  • ½ c. brown sugar
  • ¼ c. golden raisins
  • 1/8 tsp. cloves
  • 2 TBSP cornstarch
  • 1 c. water

Instructions

  1. Cook apple in butter until tender.
  2. Stir in brown sugar, raisins and cloves.
  3. Blend cornstarch, water and lemon juice in small bowl.
  4. Stir into apple mixture, cooking until mixture thickens & boils.
  5. Serve warm over turkey.

Yield: 10-12 Servings

Ingredients

  • 1 (4 lb.) chicken
  • ½ c. butter
  • 2 c. chopped onion
  • 2 c. chopped celery
  • 7 c. crumbled cornbread (2 boxes Jiffy)
  • 2 c. crumbled biscuits
  • 4 ½ c. chicken broth
  • 1 can cream of celery
  • 3 large eggs lightly beaten
  • 6 boiled eggs chopped
  • 1 TBSP poultry seasoning
  • 1 tsp. salt

Instructions

  1. Boil chicken in salted water.
  2. De-bone and cut chicken into bite size pieces.
  3. Strain broth and reserve (or you can used canned broth)
  4. Melt butter and sauté onions and celery 6 – 8 minutes.
  5. In a large bowl combine all ingredients,
  6. Pour into lightly greased 9 X 13 pan.
  7. Bake uncovered @ 350 for 1-1 ½ hours until set.

  • 2 lbs. lean beef stew
  • 3 large carrots, cut into 1 in. pieces
  • 2 medium baking potatoes, cut into 1 in. pieces
  • 1 medium onion, cut in chunks
  • 1 (14.5 oz) can Italian-style dice tomatoes
  • 1 (14 oz) can beef broth
  • 1 (10.5 oz) can tomato soup
  • ½ c. red wine (or water)
  • 2 tsp. Italian seasoning
  • 1 tsp. garlic salt

Instructions

  1. Combine all ingredients in a 6 qt. slow cooker.
  2. Cover, cook on low 8-9 hours.

Sweet & Spicy Almond Green Beans

Yield: 4 servings

Ingredients

  • 1 lb frozen green beans
  • ½ c. slivered almonds
  • 2 TBSP butter
  • *1 clove garlic finely chopped
  • **1TBSP firmly packed brown sugar
  • 2 to 3 TBSP fresh lemon juice
  • ¼ tsp. red pepper flakes
  • ¼ tsp. salt
  • * I use garlic powder – about ½ teaspoon
    ** I use Splenda Brown Sugar Substitute

Instructions

  1. Plunge green beans into salted boiling water. Cook 4-5 minutes until just tender. Drain and rinse in cold water.
  2. Sauté almonds in butter until crisp. Add beans.
  3. Stir in rest of ingredients. Cook stirring constantly until sugar dissolves and beans are glazed – about 30 seconds.
