White Cake

Ingredients

  • 4 egg whites
  • ½ cup oil
  • 1 ¼ cups water
  • 1 tsp. Wilton Butter Flavor
  • 1 15.25 oz Duncan Hines cake mix PLUS 3 oz. from a second box
  • 1 white chocolate instant pudding mix

Instructions

  1. Preheat oven to 350 degrees.
  2. Beat eggs, add oil, water and flavoring.
  3. Blend in cake mix and pudding on low speed until moist. Beat at medium speed 2 minutes.
  4. Scrape down bowl/beaters and beat for 30 more seconds.
  5. Bake cupcakes 18-19 minutes
  6. Bake 8-9 inch round pan – 25-30 minutes

Caramel Apple Dip

Caramel Apple Dip

Ingredients

    Layer 1
  • 2-8oz boxes cream cheese, softened
  • 1 c. brown sugar
  • 1/2 c. white sugar
  • 1 tsp. vanilla flavoring
  • Layer 2
  • 1 container caramel dip (ie. Marzetti, 13.5 oz)
  • Layer 3
  • 2 Heath Bars (crushed) OR 8 oz. bag of Heath English Toffee Bits

Instructions

  1. Cream together cream cheese, brown sugar, white sugar and vanilla. Spoon into pie plate or similar sized dish. Refrigerate for a while to make smoothing the caramel dip (layer 2) easier.
  2. Microwave caramel dip for about 30 seconds; pour and smooth over cream cheese layer.
  3. Spread crushed Heath bars (or 3/4 bag of candy bits) over caramel layer.
  4. Refrigerate until ready to eat. Serve with sliced apples.

White Chocolate Macadamia Cranberry Dreams

  • 3 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 3/4 cup white sugar
  • 1 cup packed light brown sugar
  • 1 cup butter, softened
  • 2 eggs, slightly beaten
  • 1 tablespoon vanilla extract
  • 1 cup vanilla baking chips
  • 1 cup chopped macadamia nuts
  • 1 cup dried cranberries

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, combine flour, baking soda and salt; set aside. Cream together white sugar, light brown sugar and butter (do not use shortening). Stir in slightly beaten eggs and vanilla.
  3. Add flour mixture until just mixed. Stir in vanilla chips, macadamia nuts and dried cranberries.
  4. Drop dough on an ungreased cookie sheet by small scoop or rounded teaspoon. Bake in preheated oven until cookies are just set, about 10 minutes. Remove from oven and let cool. Cookies will sink slightly.

Notes

Variations: To make chocolate cookies, omit 1/2 cup flour and replace with 1/2 cup cocoa.

To make refrigerator cookies: Roll dough into 2 rolls, wrap with plastic wrap and chill or freeze. (If you freeze the dough, thaw for at least 1/2 hour before cutting). Slice 1-inch slices; cut into 4 and place on baking sheet point up.

For fancier cookies: Drizzle melted white chocolate on chocolate cookies and melted dark chocolate on the white cookie.
