Pineapple Coconut Cake
Ingredients
- 1 box yellow cake mix
- 4 eggs
- 1 cup oil
- 1/2 can crushed pineapple with juice
- 1 tsp. almond extract
- 1/2 stick butter
- 2 cups powdered sugar
- remainder of pineapple
- 1 (3 1/2) can coconut

Instructions
- Preheat oven to 325 degrees.
- Mix all ingredients.
- Beat at medium speed for 3 minutes.
- Sprinkle with coconut.
- Bake for 35 min. in greased and floured 9 X13 pan.
- While hot, pierce cake with fork and spread icing on cake.
- Beat 1st 3 ingredients.
- Spread on warm cake.
- Sprinkle with coconut.
- Press coconut into icing.
- Cool 45-50 minutes before serving.
